I can not get enough of this super healthy twist on the typical ravioli!
I have subbed out the unhealthy, processed white carb laden ravioli for our healthy green friend, the ZUCCHINI!
It’s super easy, super healthy, and super FAST! So get to it! Here is the recipe:

Makes 15-20 ravioli
2 cups chopped fresh spinach
1/2 large onion
2 cloves of garlic

Sauce:
1 small can of no sodium added diced tomatoes
1 tsp olive oil
2 cloves of garlic, minced
1 tsp fresh basil
1/2 tsp fresh oregano
- Preheat oven to 400
- Using a peeler or mandolin of some sort, start stripping the zucchini into long strips
- Prepare and combine filling ingredients above into a bowl
- Lay out 1 strip of zucchini horizontally,then another vertically to make a “cross.”
- With a spoon, add filling to the center of the cross. Fold all sides in to make a nice little packet.
- Turn over and place in a greased pan (with EVOO) Bake for about 20-25 minutes until zucchini is tender.
- In another pan, heat oil and cook onions and garlic until translucent and fragrant.
- Combine ingredients for sauce from the above list.
- Once the zucchini is done, pour over top, sprinkle a lil parm cheese and EAT! ! MANJ!
