Mini Veggie and Egg Frittata Recipe (Tuesday Tweak)

What are you having for breakfast today?  Same old, same old?

Change the course of your day by getting into these quick and easy Mini Egg + Veggie Frittatas!  You’ll never look at eggs the same way again!

– 2 cups chopped spinach,

– 2 cups chopped red & green peppers
– Beat 5 eggs then mix in veggies
– Pour veggies & eggs into mini muffin tin
– Bake at 350 for 20 mins!

These stay good in the fridge for about 3 days! So do yourself a favor and double the recipe to make a few days worth! (And cut the crap with the “i dont have time for a breakfast”routine!)
